Lentil-Feta Salad (in vegrecipes)

Verdict:  tasty!  I used a smaller amount of regular onion instead of red onion 'cause I didn't have red onion. I also used a lime instead of a lemon for the same reason.  (I had all the other ingredients sitting around, as it happens.)

I'm not a huge feta person or a cold salad (other than the regular tomato-pepper-cucumber kind) person, but this is pretty good.  I definitely need to make an effort to establish a collection of quick, cold dishes for summer.  So far I have: 1) Ice Cream , and that doesn't really count.
