I only peeled half the potatoes, omitted the garlic mostly by accident, didn't really measure the spices, put in too much cayenne pepper, and used frozen peas instead of canned. I think canned peas are silly. The cayenne pepper was the only problem...I was sort of doubling the recipe (though I used just one can of coconut milk), so I figured being loose with the measurements would be okay. Adding extra ginger, garlic, or cumin to most recipes is fine, and I suspect extra garam masala or curry would have been okay. Delicious, even. Too much cayenne pepper isn't quite the same...
But! I'd never cooked with coconut milk before. It's nice stuff. And I've been successfully making largish pots of Real Food and living off of them for a few days, which is good. Eating crappy food makes me feel yucky.
